Peameal Rib Eye Steaks with Southern Comfort Mustard BBQ Sauce

Serves 4

Breakfast grilled steak and eggs. Tasty treat to start your day off with a bang.

Ingredients:

Special Equipment: Griddle attachment for gas grill or a fry pan

4 Peameal steaks, 8 oz each, 1 to 1 1/2 inches thick
4 tbsp bbq seasoning

1 tbsp margarine
2 small onions, sliced
1 red pepper, sliced
1 green pepper, sliced
1 Hot banana pepper
2 baked potatoes, diced
salt, pepper and bbq seasoning

1/4 cup Southern comfort
2 tbsp Old fashioned grain mustard
1 cup BBQ Sauce
1 Grapefruit, juiced
salt, pepper

4 Eggs
1/4 cup Whipped cream
1 tsp chives
Salt and pepper

4 slices Texas toast


Cooking Instructions

1. Season the peameal steaks with bbq seasoning, rubbing the seasoning into the meat. Set aside.

2. Mix together the Southern Comfort, mustard, bbq sauce, grapefruit juice and season with salt and pepper, set aside.

3. Mix together the eggs, whipped cream, chives and season with salt and pepper. Set aside

4. Preheat grill to medium high heat.

5. Place on the peameal steaks on the grill and cook for 4 to 5 minutes per side for medium doneness. Brush with the southern comfort bbq sauce during the last half of the cooking time. Remove from heat and allow to rest for 5 minutes before serving.

6. Place the margarine on the griddle followed by the onions, red, green and banana peppers, baked potato chunks and cook for 8 to 10 minutes stirring frequently. Season with salt, pepper and bbq seasoning. Push the peppers and onions to the side and pour the egg mixture onto the griddle. Scramble the eggs until cooked through, about 5 to 6 minutes.

7. Toast the Texas toast on the upper rack until golden brown and crisp.

8. Place a steak on each plate and top with peppers, onions and eggs. Serve with Texas toast.
